白 is white, and 菜 is vegetable, so 白菜 is white vegetable.

Bok choy is usually 小白菜 small or baby bok choy, or 上海白菜 “Shanghai” bok choy, as opposed to 大白菜 big bok choy, otherwise known as Chinese or Napa cabbage.

Bok choy is aleafy green vegetable similar to chinese broccoli.
