炒 is stir-fried, and 飯 is rice (cooked), so 炒飯 is stir-fried rice.
Chinese fried rice is cooked rice that has been cooled and then stir-fied with meats and vegetables (often leftovers).

Don't feel obligated to try eating fried rice with chopsticks. In Asia, fried rice is often eaten with a spoon. It's a lot easier!

It's often advised to use day-old refrigerated rice which has dried out somewhat and won't be a sticky clump like freshly-cooked rice (in fact, fried rice originated as a way to reuse leftover rice).Although Danny Bowien in his Mission Chinese Food Cookbook advocates frying freshly-cooked rice.
