宮保雞丁

宮保 (the kung pao portion) refer to the official's title, while 雞丁 is diced chicken. 丁 also punnily refers to the official's surname Ding.

Kung pao chicken, diced chicken mixed with peanuts and chilies, is familiar in Chinese-American cuisine but originated in Sichuan.

History

Kung Pao chicken is named after a Qing Dynasty official named Ding Baozhen who popularized the dish. During the Cultural Revolution, due to the association of the name with the imperialist past, the dish was given a more generic name, but now Kung Pao chicken is back!
