煎 is fried (actually pan-fried, even though sesame balls are usually deep-fried) and 堆 is a heap or pile.
Also known more literally as sesame seed ball芝麻球 (jī màh kàu in Cantonese) where 芝麻 is sesame seed and 球 is ball.
