sīng jāu cháau maih fán
星洲 (sometimes written as 星州) is a short name for Singapore. 炒 is stir-fried, and 米粉 is rice noodles. Often shortened to 星洲炒米 or even 星米.
Thin rice noodles flavored with curry powder, stir-fried with vegetables, meat (typically some combination of shrimp, chicken, beef, chia siu...) and scrambled eggs.
Origin
Despite the name, these noodles probably did not originate from Singapore. More likely, they were invented in Hong Kong and named after Singapore due to the curry ingredient.
