釀茄子

釀 is used to describe stuffed vegetables, and 茄子 is eggplant, so 釀茄子 is stuffed eggplant.

In the same manner as stuffed tofu, this is eggplant (Chinese/Japanese eggplant, which is longer and thinner than Western eggplant), stuffed and served with a thick soy sauce.
