yùh hēung ké jí
魚 is fish, and 香 is fragrant (same 香 used in Hong Kong 香港), so 魚香 is fish fragrant. And 茄子 is eggplant, so 魚香茄子 is fish fragrant eggplant.
Despite the name, this Sichuan dish has no fish in it (but perhaps playing it safe, it's often listed as eggplant with garlic).
