左宗棠 is General Tso's full name (sans “General”), and 雞 is chicken.
Another battered fried chicken coated in a sweet sauce, General Tso's chicken just has to be a Chinese-American dish (and in fact there are competing claims to its invention by restaurants in New York City).
History
General Tso was indeed a famous Chinese general, born in Hunan. Fuschia Dunlop in Revolutionary Chinese Cookbook devotes several pages to the story of the general dish and this dish and it is now associated with Hunan cuisine. And The Search for General Tso is a documentary covering Chinese-American cuisine, the history of Chinese-American immigration, and General Tso himself.
