蒸 is steamed, 水 is water, and 蛋 is egg, so 蒸水蛋 is steamed water egg.
Egg mixed with water and then steamed. Basically steamed scrambled egg, but resembling a custard.
This is a dine-in dish. I used to get this as part of a takeout meal but by the time I got home it fragmented and looked more like egg drop soup.
