chèuhn choi
秦 is Qin, another name for the region (birthplace of the Qin dynasty, China's first imperial dynasty), and 菜 is vegetable or dish or cuisine, so 秦菜 is Shaanxi cuisine or Qin cuisine.
Shaanxi cuisine, influenced by neighboring Shanxi and Sichuan provinces, is characterized by an abundance of lamb dishes and fragrant spiciness (香辣). It's most well-known dish is probably the so-called Chinese hamburger (more like a pita sandwich), popular throughout China and increasingly outside.
