滬菜

滬 is another name for Shanghai (short for 滬江), and 菜 is vegetable or dish or cuisine, so 滬菜 is Shanghai cuisine or Hu cuisine.

Shanghai cuisine, also known as Hu cuisine, overlaps with neighboring cuisines in the Jiangnan region (known as The Land of Fish and Rice), including Jiangsu cuisine and Zhejiang cuisine.
